Our retail business started in 2020, just as the world was coming to halt. We were tired of being told what our cattle were worth, we wanted more control of our profits. So Rocky Top Meats was given life. When developing our young enterprise, we wanted to provide a quality piece of meat, that was affordable for all families. Our cattle are the backbone of the ranch. Our meat is not sold in any stores, we want full control of the relationship with customers. Our family takes the meat to different farmer markets each week during the market season. During the off season we have taken orders and delivery to the town of market. So we are year round, which is still growing, this website store is another step in growth. So you can take comfort in knowing that your meat is well taken care of alive and in the package.
All family members are Beef Quality Assurance certified, also known as BQA.
The farm has Bio-Security plan in place with Kansas Dept. Ag.
Calves are raised with the cows in the pastures for 8 months. Then weaned from cow and moved to other pastures for another 5-6 months with supplements. Then moved to the full feed area.
At weaning they are vaccinated for respiratory diseases, if given any antibiotics are given they are pulled from the retail program.
All retail cuts beef and pork are USDA inspected.
All cutes are double wrapped in clear packages.
Ground beef and pork are double ground.
14 days of carcass hanging in cooler. This is natural process of tenderizing, enhancing the flavor.
At Rocky Top Meats, we don't mass produce- we pasture produce.
Our beef is ranch raised with time, care, and Kansas grit. Because we do it right, we restock the beef once a month.
When it sells out, that just means the herd's doing its job.
